Description
This exceptional coffee comes from a nano-lot cultivated in the Los Santos region of Costa Rica, at an altitude ranging between 1,600 and 1,800 meters. Benefiting from a mountainous microclimate and nutrient-rich soils, this plot offers ideal conditions for precision farming.
Javier González, a passionate producer, practices agroforestry-based agriculture, promoting local biodiversity while ensuring consistent cup quality year after year. Harvested from the Red Geisha variety, this coffee is the result of meticulous craftsmanship, from manual and selective picking to careful on-site processing.
The cherries, picked at peak ripeness, undergo controlled lactic fermentation, a process that unlocks the bean's full aromatic potential without masking its terroir. A natural process, followed by slow sun-drying, enhances the coffee’s sweetness while intensifying its fruit-forward profile.
A medium roast, done in small batches, is tailored for filter extraction, revealing the refined character of the Geisha while balancing acidity and natural sweetness. In the cup, it offers a soft and silky texture, with flavor notes of red fruits and peach, complemented by a subtle lactonic backdrop.
